Trial and Error!!

So y’all know that I have been on this healthier eating tip for a little while now and I must say I am really enjoying it. I have always liked to try new things and cook but it is sooo exciting to discover new healthier recipes 🙂

I am exploring the different ingredients that I never knew about before and trying to make my experiences as enjoyable as possible. I have a major sweet tooth and I have cut out things like cakes and chocolate etc, but lately I have found recipes for sweet things that can let you have that bit of sweetness. These recipes I find have ingredients in them that are nutritional and not just full of fat, sugar and rubbish.

Now I have been trying to find tasty and delicious things to have for breakfast, smoothies and porridge (even though they are yummy) it can get a bit boring after a while. So I have been experimenting in the kitchen with different pancake recipes, I have seen a lot of recipes and with the inspiration I decided to try a few of my own out.

I tried these Quinoa and banana pancakes recipe now I do like quinoa but I think the texture was a bit too much for me. I am very funny about the texture of food in my mouth (yes I know that sounds weird lol). The flavour was nice but I didn’t find them filling enough, so I think it was time to move onto the next one.

INGREDIENTS (no measurements as I kind of just eyeballed it) 🙂

Cooked quinoa

Egg

Cinnamon

Nutmeg

Vanilla essence

Mashed banana and chopped up banana (to put on top)

Maple syrup or honey (tsp in the pancakes to sweeten)

Walnuts or pecans (to put on top)

Used coconut oil to cook them

I next tried Banana and Oatmeal pancakes recipe!!

I don’t have a picture for these pancakes as they crumbled up and just looked a mess.

Coconut flour needs something else to help it bind so grounded down nuts could help with that or a little wholemeal flour.

Again the texture wasn’t really for me maybe I will try these again with an added nut.

Oats

Coconut  flour

Cinnamon

Nutmeg

Vanilla essence

Egg

Almond milk

Pecans or walnuts ( to put on top)

Maple syrup

Used coconut oil to cook them

These are Oats and wholemeal flour pancakes I think I done it I found the recipe I like :). The only additions I will make will be adding really ripe banana or plantain in the batter, this will add  natural sweetness.

Wholemeal flour

Oats

Egg

Cinnamon

Nutmeg

Vanilla essence

Honey or maple syrup (for sweetness)

Banana (to put on top)

Pecans or walnuts (to put on top)

Almond milk

Used coconut oil to cook them

I must say that these are very DELISH I could happily eat a stack but don’t want to get too carried away hehe.

Anyway if you like pancakes and want something different for breakfast on a weekend maybe, try these healthier and tastier versions of pancakes out!!
