Home-made Yummy Granola bars!

So I have been getting a bit bored lately with trying to find healthy and nutritious snacks that satisfy you and still taste good.

I tried out a flapjack bar from the local supermarket which had really good ingredients, but felt like I was eating bird seed!!

It was time to turn to the kitchen so I decided to make some “Granola bars”

I already had all the ingredients I needed so operations Granola bars commenced!!

INGREDIENTS

230g (2 1/2 cups) Rolled Oats (chunky oats are good)

80 g (1/2 cup) Almonds (chopped coarsely)

Handful of:

Pecans

Linseed

Sunflower seeds

desiccated Coconut (avoid the ones with added sugar)

113 g (1/3 cup) Honey

56g (1/4) Coconut oil

Dried fruit of you choice (cranberries, sultanas, raisins etc) I used Dates

Pinch of cinnamon

COOKING TOOLS

A large bowl (to mix the ingredients together in)

Small pot ( to melt the honey and coconut oil)

Spoon (to mix)

Square pan or dish

Baking tray

Foil

Cling film

Spatula or Large spoon.

HOW TO MAKE 

First of all you want to measure out your oats and any nuts or seeds you are using.

Pre heat your oven to about 170 c

Transfer you oats, nuts and seeds to a large baking tray and spread out the mixture.

Toast the mixture in the oven for about 5-7 mins.

Next measure out your coconut oil and honey add to a pan and heat.

Once the oats, nuts and seeds are toasted and the honey, coconut oil is melted combine the two.

Mix thoroughly to ensure everything is coated.

Let the mixture cool for about 5 mins then add your dried fruit or maybe even chocolate chips.

Once cool line your square pan or dish with foil

Pour the mixture into the pan spread out and press firmly.

You want to spend about a 1 minute pressing your mixture firmly into the pan ( this will enable the Granola to set together).

I like to take a piece of cling film lay it on top and press down with my hands.

Once you are done with the pressing cover with cling and transfer to the fridge for about 2 hours.

Once they are chilled peel off the foil and cut in to shapes I did my in long rectangles.

You should get about 8 more if you cut them smaller. ( I ate two before I took the picture haha) 🙂

These will be enough to last you a week so those of you who like to meal prep this is a really good snack or breakfast to make.

These are so cheap to make, taste DELISH and way better than those so-called healthy bars out there.

I will be playing around with ingredients different nuts, dried fruits and some proper chocolate cacao nibs.
