Hey y’all just stopping by to give you my tasty, filling and nutritious alternative for a typical burger patties. The powerhouse of this recipe are Pinto beans which are not only a great fiber source but they are packed with iron, B vitamins, folate, magnesium and manganese. They also give you energy and stabilize the blood sugar which we most definitely need on the daily. So enough chit chat lets get to making these tasty thangs…..
INGREDIENTSÂ
2 cups of Pinto beans ( soaked in cold water over night)
1/2 of a green pepper
1/2 red pepper
1/2 Red Onion
1/2 cup of oats
1 Flax egg ( 1 tbsp of ground flax seed mixed with three tbsps of water)
Spice mix:
1 tsp Cumin
1 tsp Garlic
1 tsp Chili powder
1/2 tsp Paprika
1/2 Himalayan pink salt
TOOLS
Large glass bowl
Food processor (optional)
Chopping board
Sharp knife
Baking tray
Greaseproof paper
HOW TO MAKE
So by now you should of already soaked your pinto beans over night ready to boil.
Rinse them and add them to a large pot of water and boil for 30 to 40 mins.
Whilst the beans are cooking you can prep the veg, spice mix and flax egg.
In a small bowl add all the spices mix and set aside.
In another small bowl add a tbsp of ground flaxseed with 3 tbsps of water and whisk, then set aside to thicken.
For the pepper and onion you can just chop up small but I chucked them all in the food processor.
Once the pinto beans are cooked you can add to them to a large glass bowl let them cool.
If you want to you can split the beans and mash half and keep the rest whole (this is optional).
Once the beans are mashed then add in the spice mix and give it a good stir.
You can then add in your veggies,oats,flax egg and give it a good mix together to bind the ingredients.
Line your baking tray with greaseproof paper and heat the grill. ( you can use foil greased with a little coconut oil).
With clean hands scoop a handful in your hand and shape into a burger shape, then place on the baking tray.
Grill on each side for 10/15 mins.
These can tend to be a bit fragile so be careful when handling.
You can have them over rice, in a burger bun or with salad the choice is yours, they only freeze well so you can make a batch and freeze.
