So those funny shaped purple things that you maybe don’t know what on earth to do with. okay I will admit that aubergine does seem to be THaT diva vegetable that isn’t the greatest if you don’t cook it right. I usually use aubergine when I am making curries and ratatouille, it is creamy and soft definitely one of my FAVORITES. this recipe is so yummy, its salty but sweet, simple and delicious. so if YOU’RE feeling a little bit adventurous and want a recipe to get your taste buds singing lets get to it….
Ingredients
2 Large aubergines
2 tbsp miso paste
1 tbsp sesame oil
1 tbsp maple syrup
sesame seeds are optional to sprinkle on top of the glaze
how to make
now when i say that a recipe is simple i really mean it, chop, bake, spread and grill!!
you simply heat your oven to about 180 C then take a baking tray and line it with baking paper.
wash your aubergines then with a sharp knife cut the heads off, cut them in half and score them (this helps them to cook).
place the aubergine flesh side down on the tray and pop into the oven for about 30 mins.
they may need longer depending on how hot your oven is but just check by how soft they are.
whilst the purple things are baking mix together your glaze by simply adding all your ingredients to a small bowl and mixing.
adjust the flavour to your liking if you like it more salty add more miso paste if you would like it sweeter add more maple syrup.
once they are baked take them out the oven and turn them on their backs, spread over your glaze generously.
you can either put them back in the oven for 10 mins or you can grill them for about 5 mins the choice is yours, just be careful not burn them.
put these bad boys with whatever you like but always remember to inhale…. may i suggest some steamed brown rice and a side salad.
