Vegan Caramel Marshmallow Brownies| 8 ingredient Recipe



So tis almost that time where we give gifts, hang with the fam and stuff our faces silly. Well I’m sure y’all know by now I’m down for anything where good food is involved, so I got a little something for you. Now Ive been making brownies for a hot minute played around with the recipe and done a few variations on flavour but these were hands down the best. These are perfect for Christmas time with the family, Chocolatey moist brownies paired with gooey caramel and chewy marshmallows food heaven at its finest. I used to love me a flump back in the days, so being able to get my hands on vegan marshmallows well I just had to throw it down in the kitchen with them. Right let’s get brownie creating but don’t eat them all save some for Christmas morning at least.

Vegan Caramel Marshmallow Brownies

Prep time 10 mins

Serves 9

Cooking time 35 mins


1 cup Dark chocolate

1/2 cup organic coconut oil

1 cup coconut palm sugar

3 flax eggs*

1/4 cup organic cacao powder

1 cup Doves farm spelt flour*

2 TBS Natures charm coconut caramel sauce

1/2 cup Freedom confectionery pink & white mini marshmallows 


how to make

  1. First make your flax eggs in a small bowl and set aside.

  2. Grab a mixing bowl add your chocolate and coconut oil then melt over a boiling pot of water or in the microwave.

  3. Once your chocolate and coconut oil is melted whisk together till smooth.

  4. Whisk in your sugar followed by your flax eggs till combined.

  5. Mix in your cacao powder this can get messy so don’t add in all at once.

  6. Lastly fold in your flour and salt.

  7. Pour the mixture into your lined baking tin and spread out with your rubber spatula.

  8. Bake for 30-35 depending if you like gooey or a little bit firmer.

  9. Once cooked pour on your caramel sauce and top with marshmallows pop under the grill. Do not let them out of your sight as it can burn within seconds.

  10. Once the marshmallows are browned and caramel sauce melted leave to cool.

  11. Cut up into squares of any size you desire and INHALE!!!


* flax eggs are made by grinding down linseeds and the mixing with water. 1 tbsp flax seed + 3tsbp water = 1 flax egg.

*you can use any other flour you like but spelt is my favourite as its light and easy to digest.
